PER SERVING:

125 calories; 14 g. of carb, 7 g. protein; 5 gm. of fat; vitamins A, C and K

Ingredients

  1. 10 leaves of a medium-size cabbage
  2. 250 gm. of boiled vegetables - finely chopped carrots, lima beans, green peas, cauliflower, beans
  3. 2-3 chopped green chillies
  4. 1 medium-sized finely chopped onion
  5. 10 ml. extra-virgin olive oil
  6. About 125 ml of tomato puree
  7. 25 gm. of grated mozarella cheese
  8. Salt and pepper

Directions

  1. Boil the cabbage leaves for a couple of minutes. Remove the water.
  2. Heat the olive oil in a frying pan
  3. Stir fry the chopped onion for about 1-2 minutes
  4. Add the chopped green chillies and continue frying for a few seconds
  5. Add the boiled vegetables to the pan
  6. Sprinkle the salt and crushed pepper
  7. Continue cooking for 2 more minutes. Your filling is now ready.
  8. Take a tablespoon of vegetable filling prepared and place it on each cabbage leaf.
  9. Add 1 teaspoon of the tomato puree on top.
  10. Roll up the leaf and place on a greased baking dish.
  11. Boil the remaining tomato puree and pour over the 10 rolls.
  12. Sprinkle grated mozarella cheese on top.
  13. Bake for about 8 minutes in an oven pre-heated to about 225 degrees F.
